What makes Bridge2Food Europe 2025 a valuable event for IFF, and what are you most looking forward to this year?

We feel upbeat about the growing opportunities in the food industry, especially the exciting rise of plant-based innovation. The summit's focus on navigating the shifting landscape in the alternative protein sector is a great opportunity for us. We are very excited and looking forward to sharing our insights, showcasing our expertise in food ingredients, engaging our customers, and most importantly fostering stronger partnerships with industry leaders to drive innovation.

The session ‘Ingredients for Tomorrow’ will explore how to tackle plant-based challenges for Future Generations. What can attendees expect to take away from this discussion?

We will dive deep into the critical challenges and opportunities in the plant-based sector, with a focus on how IFF can tackle these issues for consumers.

Attendees can expect to gain valuable insights into the latest innovations, consumers behaviour and strategies that are shaping the future of plant-based foods, including improving nutritional quality, addressing manufacturing limitations, and exploring emerging technologies.

The session will also highlight sustainability and how plant-based solutions can contribute to a healthier planet and consumer’s point of view. Attendees will walk away with more knowledge on efforts to reduce the environmental impact of food production.

Your session, ‘Beyond Imitation,’ highlights the push toward better nutrition in plant-based foods. Why is it important to go beyond mimicking meat or dairy—and how is IFF helping brands deliver more with high-protein solutions?

Consumer surveys indicate that while many people are interested in transitioning to plant-based protein alternatives to reduce meat and dairy consumption and benefit the global carbon footprint, they often revert to traditional foods if plant-based options disappoint them. This highlights the importance of not just mimicking meat or dairy but creating plant-based foods and beverages that are nutritionally superior, stable, and sensorially appealing.

IFF Food Ingredients portfolio empowers brands to develop high-protein plant-based food and beverage alternatives that meet these criteria. Additionally, ensuring the final product presents the desired appearance, taste, mouthfeel, and stability that appeals to consumers. By leveraging our extensive experience and knowledge of ingredient interactions, we support our customers in overcoming the key challenges of creating successful plant-based formulations.

Looking ahead, is there a direction in plant-based food you think will become more important—and how is IFF preparing for it?

The future of plant-based food lies in prioritising sustainability and health. As consumers become increasingly aware of the environmental impact of their food choices and seek healthier options, the demand for plant-based foods that offer both nutritional benefits and sustainability will continue to grow. It's time to move beyond merely mimicking meat or dairy and create unique eating occasions for consumers. The key question is whether the market is ready to provide options for all different occasions, from morning to night.

IFF is actively preparing for this shift by investing in innovative food ingredient solutions of plant-based foods to meet the growing consumer demand for healthier options. For example, IFF’s SUPRO® TEX soy protein. We believe that consumers are looking for their plant-based foods to be better, if not similar, in nutritional value, appearance, taste, and shelf-life than their meat or dairy counterparts.

Creating protein-rich plant-based foods poses challenges in taste and functional stability, which is why IFF places a strong focus on optimizing protein portfolio. With our broad range of proteins and expertise in developing stable, great-tasting solutions, we aim to remain a key partner in supporting our customers' efforts to develop more sustainable food and beverage options.

Whether it’s a new solution, initiative, or insight—has anything exciting emerged recently at IFF that you would like to share with us?

With the launch of our new TRUPRO™ 2100 pea protein earlier this year, we've not only enhanced the taste by minimizing the off notes of pea, but we've also reduced the fermentation time for plant-based yogurt by 5 hours! We're excited to present this innovative product at our upcoming Summit presentation.

Additionally, we are collaborating with the Soy Nutrition Institute to submit a new heart health claim for soy protein in New Zealand this year. Soy protein continues to be important for people who want to consumer a heart-healthy protein. This initiative is set to pave the way for similar claims in other countries soon after.
