Unlocking the Consumer Code

Bridge2Food Europe 2026 is set to take place in Copenhagen, with a renewed focus on what really defines success in next-generation food innovation: products that consumers genuinely want to buy, eat, and come back for.

From taste and texture to functionality, processing, scale-up, nutrition, and cost, we’ll tackle the hard topics that stand between innovation and commercial reality.

What to Expect in 2026

Our 2026 agenda is designed for the people turning innovation into reality. Across three focused days, you’ll gain practical insights, real-world learnings, and meaningful connections to help you move faster — and in the right direction.

DAY 1:
9th June 2026

Bridge2Food Europe 2026 begins with a dedicated Technical Course at the Novonesis Innovation Campus, co-created with Imperial’s Bezos Centre for Sustainable Protein to combine world-class research with practical industry application. Led by some of the world’s leading scientists and experts from institutions including the Bezos Centre, North Carolina State University, DTU Biosustain, the University of Reading, UCL Biochemical Engineering, and Tufts University, the programme is designed to give attendees valuable technical insight into the developments shaping next-generation food products across fermentation, plant-based, and cell-cultivated innovation.

In the afternoon, the course moves into interactive workshops led by Novonesis, Biospringer by Lesaffre, ADM, endeco, CJ Bio, Tetra Pak, Roquette, and Flottweg, giving attendees the opportunity to explore real product development and processing challenges in greater depth. The day concludes with the Welcome Reception, where the full event community comes together to connect, plan meetings, and begin the Summit with momentum.

DAY 2 & 3:
10th - 11th June 2026

Bridge2Food Europe 2026 continues with a two-day Summit designed to connect market insight, scientific thinking, and practical industry action across the future of food innovation. The programme opens with high-level plenary on the forces shaping consumer choice and commercial relevance, with voices from Innova Market Insights, Behavior Global, ReD Associates, Green Queen Media, Wageningen University & Research, and SPORA exploring global consumer trends, healthy food choices, behavioural science, policy, and the wider narratives influencing food systems.

Across "Track I: Consumer & Market Trends", "Track II: Product Development & Processing", and "Track III: Health-Driven Innovation: From Science to Consumer Trends", attendees will hear from leading companies, brands, researchers, and innovators including IFF, Oatly, Novonesis, ADM, Mondelēz, Nestlé, Euromonitor, MAX Burgers, and Wageningen Food & Biobased Research. Together, Days 2 and 3 are designed to help attendees turn insight into action, build valuable connections, and move food innovation forward with greater confidence.
