Leveraging germination technology in plant-based foods offers a myriad of taste, texture and nutritional benefits. Germination can improve the organoleptic qualities of plant proteins, optimise nutrition and improve protein digestibility. Attendees can expect to gain a deeper understanding of germination from the session and understand how leveraging this technology can improve the quality of plant-based meat and seafood – hopefully inspiring ideas for their own product development.
ROVITARIS® SprouTx™ introduces a new approach to plant-based proteins. What sets it apart from other soy-based solutions, and how can it help brands develop better plant-based products?
Soy has long been a staple in plant-based diets. Conventional TVP is typically made from soy protein isolates or concentrates, which are byproducts of extensive processing following oil extraction. This over-processing can often lead to off-flavours due to fat oxidation and a loss of essential nutrients. In contrast, SprouTx adopts a whole-food approach, utilizing proprietary seed germination technology without added chemicals. This process not only enhances the taste profile by reducing off-flavours and boosting umami (free glutamic acid) but also preserves more nutrients and improves textural properties.
As a result, SprouTx empowers our customers to create the next generation of plant-based products with superior flavour, higher nutritional value, and enhanced texture that meet consumer expectations
Bringing new ingredient innovations to market comes with challenges. What challenges do companies face in this process, and how does ICL help brands overcome them?
New product development is an expensive and time-consuming process whose challenges are compounded by the fact the plant-based market is constantly evolving and is extremely competitive.
