Amano Enzyme

We’re excited to have Amano Enzyme at Bridge2Food Europe 2025! Why did Amano Enzyme choose to be part of this year’s event, and what are you most looking forward to?

Bridge2Food is a leading platform for innovation in the plant-based space, aligning perfectly with our mission to explore unlimited possibilities. We’re looking forward to engaging conversations with like-minded professionals and sharing how enzymatic technologies can solve real formulation challenges and elevate product performance.

What makes Amano a valuable partner for brands developing plant-based products today?

With over 120 years of experience in biotechnology, Amano Enzyme is uniquely positioned to support plant-based innovation. We have the widest range of organic-compliant enzymes in our portfolio and pipeline, with a clear focus on application development and technical support in this segment.  You can see some of these examples in my presentation.

What can attendees expect to learn from your presentation, ‘Driving Non-Dairy Innovation with Enzymes’?

Attendees will learn how targeted enzymatic solutions can address common issues in plant-based drinks, such as poor foamability, separation in hot applications, or a lack of flavour in no-sugar formulations. We’ll share technical insights and case studies that demonstrate how our enzymes can deliver functionality, efficiency, and a better sensory experience.

What makes the Plants Unlimited™ platform especially effective for innovation in plant-based beverages?

Plants Unlimited™ is a one-stop, organic-compliant solution that consolidates our latest enzyme technologies, including PG500, Veramax G3, and CheeseMax PB, into a single, solution-driven platform. These enzymes are designed to meet today’s plant-based formulation demands, offering enhanced texture, stability, and sweetness while supporting clean-label claims and regulatory compliance.

Bridge2Food is a space for connection. What kinds of collaboration is Amano hoping to explore with other attendees this year?

We’re keen to connect with R&D scientists, product developers, innovation leads, and commercial teams to understand their formulation challenges and explore collaborative opportunities. Whether it's co-developing applications, trialling new enzyme solutions, or exchanging insights on emerging market needs, we’re open to partnership across all stages of product development.

Is there a recent success that reflects how your work supports plant-based beverage innovation?

A recent success involved our Veramax G3 enzyme, which enables formulators to create no-sugar oat drinks with no compromises. Typically, manufacturers dilute the oat base or limit the hydrolysis of starch to maintain a low enough sugar content to meet the labelling requirements. Veramax G3 enables minimising glucose and maltose contents while maximising maltotriose content to naturally enhance the sweetness of your oat-based drinks.

Thanks for sharing your insights. Anything else you’d like to share with the Bridge2Food community?

We’re excited about what’s next. Beyond drinks, we’re applying our enzymatic expertise to plant-based proteins and cheese alternatives. At Amano Enzyme, we believe in exploring unlimited possibilities, and we look forward to collaborating with others at Bridge2Food to help shape the future of food.
