John is currently a Research Fellow at Brunel University London, where his work focuses on the development and future of plant-based meat analogues within the food industry. Utilising advanced in vitro digestion techniques and analytical methodologies such as LC-MS, HPLC, ICP-OES, Dumas combustion analysis (Dumatherm), and spectrophotometry, he investigate how these innovative products can serve as sustainable alternatives to traditional meat.

His other research interests delve into the realm of "smart foods," which aim to tackle the dual challenges of diet-related malnutrition—both macro- and micro-nutrient deficiencies—and non-communicable diseases linked to dietary habits. By exploring novel food processing techniques, John strives to create versatile, nutritionally optimised products that address these pressing global health concerns. With a strong academic background complemented by hands-on experience in the food industry, I bring a unique perspective to bridging the gap between scientific research and its practical application. Having previously served as a lecturer and held roles in quality control and product development, he possess expertise in translating laboratory findings into scalable solutions for food innovation. This proficiency has enabled him to provide consultancy services to start-ups specialising in food products, processing technologies, and research and development initiatives.

Beyond his technical pursuits, I am deeply committed to nurturing the next generation of professionals. Through previous roles as a faculty mentor and developer of extracurricular programmes for university student accommodation, John has honed skills in student mentorship and leadership development. He is passionate about sharing his knowledge and experiences with emerging talents, helping them grow into future leaders who will drive meaningful change in the field of food science. Johns diverse skill set, combined with his enthusiasm for advancing sustainable and health-focused food systems, positions him as a dedicated contributor to the evolution of plant-based meats and their transformative potential in addressing some of today’s most critical nutritional and environmental challenges.
