Charlotte Vinther Schmidt
Charlotte is a Food Science Engineer with a PhD in umami synergy. She is the visionary architect behind FEAST Ingredients’ proprietary fermentation technology that transform a single agricultural input of organic yellow peas into an organic, high-performance, functional food ingredient for the global food industry.
Charlotte leads FEAST in its mission to become the "clean-label bridge" for the plant-forward and hybrid-food markets. She advocates for transparency, positioning FEAST’s fermented umami taste enhancer as the honest, transparent, and superior alternative to industrial yeast extracts and "black box" natural flavourings. By leveraging true umami taste rather than superficial aromas, FEAST’s technology empowers R&D teams to solve the "flavour gap" in meat reduction and low-sodium applications. Charlotte’s goal is to eliminate the trade-off between clean-label, sustainability and palatability, providing a non-UPF solution that restores consumer trust and elevates the "gold standard" of savoury convenience food.
