    This session will explore how marketing of healthy, sustainable foods has shifted over time in response to consumer interests and concerns. It will highlight that there is no single “consumer”, and instead will introduce some of the major audience segments that are relevant to healthy, sustainable food innovation. The range of different behavior change and marketing tactics that may resonate with each segment will be explored, in addition to introducing some of the best and most fundamental principles for creating successful dietary behavior change.
